Banana-chia pudding

Ever since discovering chia seeds I am addicted. I love them in bread, granola, smoothies and in this great pudding recipe. The best about this recipe is that it’s easily prepared. You just soak the chia seeds over night and the next morning breakfast is ready! Perfect for when you don’t have time to make anything. It’s also great to take on the-go or to office.

Chia seeds are little miracle seeds full of fibre, calcium, magnesium, iron and omega-3 fatty acids. They expand in liquids and keep you full for long. A great alternative to granola especially for people trying to eat a gluten-free nutrition.

Banana-chia pudding

Servings 1

Ingredients

  • 250 ml almond milk
  • 1 banana
  • 2 1/2 tbsp chia seeds
  • 1/2 tsp ground vanilla
  • 1/4 tsp cinnamon
  • 1 tbsp almond butter

Instructions

  1. In a blender blend almond milk, banana, vanilla, cinnamon and almond butter. Stir in the chia seeds and keep in the fridge overnight to expand.
  2. The next morning stir well and enjoy with fruits and nuts.
