During fall I simply love cooking, baking and creating new recipes with all the wonderful seasonal produce. Crunchy and crisp apples are a big part of it. They’re just so versatile and add so much flavour to any dish with their sweet and sour taste. On top of that they’re just incredibly healthy. They contain lots of pectin, vitamins and minerals and help digestion and lowering cholesterol. I’m sure you’ve heard of the popular saying “An apple a day, keeps the doctor away”.
This smoothie recipe is made with crisp and sour apples, simmered with cinnamon and coconut blossom sugar until tender and then blended with delicious cashew milk. The combination of the tartness of the apples paired with a touch of cinnamon and caramel tastes simply heavenly.
Caramel-cinnamon apple smoothie
- 2 tart apples
- 100 ml water
- 1 tsp cinnamon
- 1 tbsp coconut blossom sugar
- 250 ml cashew milk
- Coconut blossom syrup and cinnamon for garnishing
Peel and core apples and cut into small pieces. Place in a small pot along with water, cinnamon and coconut blossom sugar. Bring to a boil, cover and let simmer for 10-15 minutes until soft and all water has evaporated. Blend until smooth. Reserve a couple of spoons and keep aside. Blend the rest along with the cashew milk. Spoon the reserved apple puree in a glas and add the cashew milk and apple mixture on top. Sprinkle with some cinnamon and drizzle with coconut blossom syrup.
