Oat and yoghurt tartlets

Happy Friday! I am so glad for the weekend and can’t wait for the summer holidays to get some much needed rest. The last weeks have been rather busy and exhausting here.
These cute little tartlets are yummy and healthy at the same time. They are vegan, without refined sugar and made with coconut yoghurt or rather coconut milk yoghurt. This is a yoghurt made entirely from coconut milk, hence it’s vegan and dairy-free. You can find it in any health-food store or bigger supermarket. By now I am totally addicted to it and could easily eat it every day. As I use it in my recipes a lot, but perhaps up until now not everybody knows about coconut yoghurt, I thought it’s a good time to mention it.
You can garnish the tartlets with every fruit you like. I used blueberries and nectarines but really anything would be amazing. If you don’t have little tartlet forms you could use one large form instead and it works just as well.

Oat and yoghurt tartlets

Servings 4 -5

Ingredients

  • 200 grams dried figs
  • 150 grams oats, gluten-free or regular
  • 3 tbsp coconut oil
  • 3 tbsp water
  • 250 grams coconut yoghurt
  • 1/2 tsp ground vanilla
  • 2 tsp rice syrup
  • blueberries, nectarines etc for garnishing

Instructions

  1. Preheat oven to 180°C/350°F and oil 4-5 tartlets forms with coconut oil.
  2. Process figs and oats in a food processor until only very small pieces are left. Add coconut oil and water and mix again in the food processor until you have a slightly sticky consistency. Press into the prepared forms and bake on the middle rack for 5-7 minutes. Take out and let cool.
  3. Mix coconut yoghurt, vanilla and rice syrup until smooth. Spread onto the tartlets and garnish with fruits.
