Since yesterday the sun is finally out here! The last days and ever since coming back from India we only had the worst wet and cold snow weather. So the sun is really putting me in a sunny mood. 🙂 And what would feel better than the lemony tingling feeling of lemons on the tongue. So I jumped on it and created this lemon balls within about 10 minutes.
I am a total snack person and love me some snacks, healthy of course in between meals. These lemony balls taste amazingly refreshing and since they’re only made with good and healthy ingredients are a guilt free pleasure.
- 1 cup coconut flour
- 1 cup oats, gluten-free or regular
- 1/2 cup cashew nuts
- Juice and peel of 1 organic lemon
- 1/2 cup apple sauce
- 3 tbsp rice malt syrup
- 2 tbsp maple syrup
- 1/2 tsp ground vanilla
Process oats and cashew nuts in a food processor until finely ground. Add all other ingredients and pulse until all is well incorporated. Roll into balls and place in the freezer for about 1 hour. Store in an airtight container in the fridge.
