Cherry and red currant crumble

A crumble is just like a fruit cake with streusel/crumbles on top but without a cake bottom. It’s a delicious dessert idea and tastes good just on ist own or served with some scoop of vanilla ice cream. You could also enjoy it for breakfast. 🙂
Crumble can be made with all kinds of fruits but since it’s still cherry and berry season this one is made with juicy and beautiful  cherries and red currants. Traditionally the crumble crust is made with flour, sugar and butter. Just like a crumb cake but of course I had to come up with healthy twist. So I used oats, almonds and maple syrup instead.
Tastes so fruity and just like summer.

Cherry and red currant crumble

Servings 4 -6

Ingredients

  • 100 grams almonds
  • 150 grams gluten free or regular oats
  • 4 tbsp coconut oil
  • 250 grams red currants
  • 300 grams cherries
  • 1 tsp ground vanilla
  • 2 tbsp coconut sugar

Instructions

  1. Preheat oven to 180°C/350°F.
  2. Grind almonds in a food processor. Add oats and pulse several times. It should not be like flour but with bits and pieces. Add coconut oil and maple syrup and pulse again until incorporated. Pit the cherries and mix together with currants, vanilla and coconut sugar. Fill into an oven-proof dish and spread the oat mixture on top.
  3. Bake on middle rack for 20-25 minutes.
