Orange nice cream

I spent one year of my early childhood in the beautiful country of Spain near Barcelona. One of my fondest memories of this time is visiting a little restaurant in a tiny village. There, I not only fell hard for the most delicious tomato bread, tortilla de patatas or Paella, but also the best ice cream served in an orange or lemon shell. To celebrate these last days of summer and pay tribute to my time in Spain I made this recipe today. It’s all vegan and contains no added sugar. All you need are 4 ingredients.

Orange nice cream

Servings 4

Ingredients

  • 2 oranges
  • 5 ripe bananas
  • 1/2 tsp ground vanilla
  • 1-2 tbsp rice syrup optional

Instructions

  1. Cut oranges in half and scrape out the pulp. Keep the orange shells and pulp in the freezer overnight or at least for several hours. Slice the bananas and keep in the freezer as well.
  2. The next day place bananas, orange pulp, vanilla and rice syrup in a food processor and process until you have a creamy consistency. Fill into the frozen shells and serve immediately.
