Although I am actually a morning person, there are days I have to drag myself out of bed and just want to be left alone. I do love breakfast and I even like to stand in the kitchen and prepare a nice spread with different breakfast foods. But if the night was bad and perhaps my little daughter paid me one to many visits then I am just not in the mood.
On days like that it is great to have a breakfast which is already done. That`s where overnight oats come into play. Just throw it together in the evening, keep it in the fridge and the next morning breakfast is served. And even a healthy and nutritious one. Saves time and the morning. 🙂
Now you could say that, how does she know if her morning is going to be good or bad. Well, let me tell you these oats taste so good that I just prepare them often and if the morning is rather “meh” then it`s a win win.
If you don`t have time in the morning for breakfast at home then you can also just toss them in your bag and take to office.
This recipe is made with chia seeds and to make it interesting with some chai spices. Gives it just the right punch.
Chai-spiced overnight chia oats
Ingredients
- 1/2 cup oats, gluten-free or regular
- 2 tbsp chia seeds
- 1 1/2 cups cashew milk or almond milk
- 1 tsp cinnamon
- 1/2 tsp ground ginger
- 1/2 tsp ground cardamom
- 1/2 tsp ground vanilla
- 1-2 tbsp maple syrup
Instructions

Mix all dry ingredients. Add cashew milk and maple syrup and mix thoroughly. Cover and place in the fridge overnight. Serve the next morning with fruits etc.
