The first cocktail I ordered in a restaurant, after I had finally turned 18, was a Pina Colada. Perhaps because it was the very first cocktail of my life or the blend of coconut and pineapple was just so darn delicious but until today I just can`t resist this combination. Not that I drink cocktails a lot, rather the opposite is the case, but I just love coconut and pineapple. So the idea for this recipe comes from that.
I like to use buckwheat often in my recipes but mostly rather baked or cooked. But if you soak buckwheat overnight and blend it afterwards with coconut milk or nut milk, you get a creamy consistency. Tastes wonderful along with some fruits for breakfast and keeps you full for long as well.
Buckwheat contains apart from good protein a lot of minerals and vitamins.
Pina Colada buckwheat pudding
Ingredients
- 1 cup buckwheat groats
- 300 grams pineapple, cubed
- 3/4 cup coconut milk
- 2 bananas
- 1/2 tsp ground vanilla
- 2 dried dates, optional
Instructions

Soak buckwheat groats overnight in water. The next day drain the water and rinse thoroughly under hot water. Place all ingredients in a blender and blend until you a creamy consistency. Serve with some pineapple, bananas and coconut flakes.

Tip: If you use a very sweet pineapple you can omit the dates.
