In case you’re wondering about the name of todays recipe, let me tell you that carrots in a porridge taste great! Because I like to change up my breakfast once in a while and try new things, this porridge was just that. A delicious and easy to make change.
Porridge is a nourishing breakfast meal which can be made in countless variations. With milk, nut milk or water, with bananas or fresh berries. With almond or peanut butter or whatever your heart desires. This recipe is a little like a carrot cake with almonds and that was the actual inspiration as well. A quick and fulfilling meal.

Carrot and almond porridge
- 1 medium-sized carrot, finely grated
- 1 cup oats (gluten-free or regular ones)
- 2 cups almond milk
- 3/4 cup coconut milk
- 2 tbsp raisins
- 3 tbsp chopped almonds
- 2 tbsp maple syrup
- 1 tbsp almond butter
- 1/2 tsp ground vanilla
Place all ingredients in a small pot, mix and let come to a boil. Simmer for 1-2 minutes on medium heat. Take off heat and cover. Let it rest for about 5 minutes and then serve.
