At our house Sunday is pancake day. 🙂 At least ever since Miss T was born. We love to get into the kitchen on Sunday morning and make pancakes together. We always make it with what is at hand and what we’re in the mood for. This one is a favourite of ours, as it’s very quick to make. The buckwheat goes very well with the sweetness of the pear and you can eat them with all kinds of toppings. Fruits, apple sauce, almond butter, maple syrup or honey, sprinkled with cinnamon sugar or whatever your heart desires. Sometimes I even make them during the week because Miss T loves them so much. A quick and easy but fulfilling meal.
Buckwheat and pear pancakes
Ingredients
- 1 large mug buckwheat flour
- 1 large mug almond milk
- 2 organic, range-free eggs
- 1 tsp ground vanilla
- 1 pear, grated
- Coconut oil for baking
Instructions

Mix all ingredients in a mixing bowl. Heat a little coconut oil in a pan and pour in spoonfuls of batter. Bake until golden-brown, then flip. Serve with your favourite toppings.
