Popsicles are an absolute favourite in our house. So easy and fast to make and without loads of sugar and other nasty ingredients. You can even have two without feeling guilty. 🙂 Such a treat on hot summer days with refreshing berries and sweet coconut milk.

Berry-coconut popsicles

Ingredients
- 200 grams frozen mixed berries
- 400 ml coconut milk
- 4-5 tbsp maple syrup
- 4 tbsp coconut cream
- 1/2 tsp ground vanilla
Instructions

Process mixed berries and 2 tbsp maple syrup with a food processor or blender roughly. There should be still some berry pieces. Mix coconut milk, coconut cream, vanilla and remaining maple syrup. Fill berry mixture alternating with the coconut mixture in popsicle moulds and freeze until firm.
