A “bowl or buddha bowl” is a current food trend, which basically means serving different healthy food components in a pretty bowl.
This trend has its origin in the Asian cuisine and a long tradition. Buddhistic monks who mainly follow a vegetarian diet enjoy their meals this way.
I like preparing and presenting my food like this too, just because it looks so pretty and can be varied as per your liking. Mainly healthy and nutritious ingredients are used.
I`m calling this pretty bowl “goodness bowl” because it`s full of good foods. I also thought to have a little fun with my sweet potatoes and beetroot. 🙂 So I brought out my cookie cutters and made some pretty shapes. So much nicer than just boring cubes. The result tasted great and my daughter simply loved it.

Goodness bowl

Servings 3 -4

Ingredients

  • 1 large sweet potato, cubed or cut flower shapes
  • 1 large zucchini, cute in fine long strips
  • 300 grams Edamame, boiled in salty water
  • 175 grams smoked tofu, cubed
  • 2 medium sized beetroots, cooked
  • 1 cup small tomatoes
  • 1/2 cucumber, sliced
  • olive oil
  • salt and black pepper

For the mushrooms

  • 200 grams button mushrooms, halved
  • 2 tbsp olive oil
  • 1 clove garlic, minced
  • 1 tsp pizza spice
  • salt and black pepper

For the beetroot hummus

  • 1 glas/can chickpeas, drained
  • 1 medium beetroot, cooked
  • 1 garlic clove
  • juice of 2 lemons
  • 100 ml water
  • salt and black pepper

Instructions

  1. Preheat the oven to 200°C/350°F.
  2. For the hummus place all ingredients in a kitchen machine and mix finely. Put aside.
  3. In separate bowls mix sweet potatoes and zucchinis with a little olive oil, salt and pepper. Put the sweet potatoes on a baking tray and bake for about 15 minutes. Add the zucchinis after 10 minutes to the same tray and bake for remaining 5 minutes along with the sweet potatoes.
  4. In the mean time prepare the mushrooms.
  5. Heat olive oil in a pot and add the button mushrooms, minced garlic, pizza spice, salt and pepper. Fry for a minute and take off the heat.
  6. The smoked tofu can be served cold or hot as per your liking. If you prefer it hot, place it in a oven-proof dish and heat under the broiler in the oven.
  7. Serve all different components in a bowl and garnish as you like. Enjoy your bowl of goodness!
