Zucchini patties

For the very first time this year we planted our own zucchinis and by now they are growing faster than we can eat them. I raised the seedlings inside and then planted them outside in our little vegetable bed. Otherwise I did nothing and didn’t even water them as it was raining here for weeks. Nevertheless they grew faster than weeds. All without any use of pesticides or fertilizer. Now that they have to be used and eaten I will probably post some zucchini recipes over the next weeks. Let’s start with this yummy zucchini patties. They taste great with a herb dip and a crunchy salad.

Zucchini patties

Servings 12

Ingredients

  • 800 grams zucchini, grated
  • 3 tbsp ground flax seeds
  • 200 grams tofu
  • 1 large onion, chopped
  • 150 grams corn flour
  • 1 tsp ground coriander
  • 1 tsp oregano
  • 1/2 tsp paprika powder
  • 4 tbsp tamari
  • salt and pepper
  • olive oil for frying

Instructions

  1. Mix flax seeds with 8 tbsp of water and leave to soak for 10 minutes.
  2. Mash tofu with a fork and mix together with all other ingredients. Heat olive oil in a pan and form patties with your hands. Fry on both sides until golden-brown.
