Carrot and almond porridge

medium-sized carrot,
finely grated

oats (gluten-free or regular ones)

almond milk

coconut milk

raisins

tbsp
chopped almonds

tbsp
maple syrup

tbsp
almond butter

tsp
ground vanilla
Instructions
Place all ingredients in a small pot, mix and let come to a boil. Simmer for 1-2 minutes on medium heat. Take off heat and cover. Let it rest for about 5 minutes and then serve.
