Carrot and almond porridge

Servings 1 -2

Ingredients

  • 1 medium-sized carrot, finely grated
  • 1 cup oats (gluten-free or regular ones)
  • 2 cups almond milk
  • 3/4 cup coconut milk
  • 2 tbsp raisins
  • 3 tbsp chopped almonds
  • 2 tbsp maple syrup
  • 1 tbsp almond butter
  • 1/2 tsp ground vanilla

Instructions

  1. Place all ingredients in a small pot, mix and let come to a boil. Simmer for 1-2 minutes on medium heat. Take off heat and cover. Let it rest for about 5 minutes and then serve.
