Banana and cinnamon waffles

Ingredients

  • 3 ripe bananas
  • 200 grams Einkorn flour or alternatively whole spelt flour
  • tsp ground cinnamon
  • pinch of salt
  • ½ ground vanilla powder
  • 1 tsp baking powder
  • 2 organic range-free eggs
  • 2 tbsp sunflower oil
  • 2 tbsp maple syrup
  • 100 ml almond milk

Instructions

  1. Separate the eggs and mash bananas in a mixing bowl. Add vanilla powder, cinnamon, egg yolks, maple syrup, sunflower oil and almond milk. Mix through.

  2. Mix the flour with baking powder and stir together with wet ingredients. Beat egg whites along with salt until stiff and fold into the batter.

  3. Preheat waffle iron and grease with oil. Drop some of the batter on your waffle iron and bake the waffles until golden-brown. Enjoy!
