In a large pot heat olive oil. Add the vegetables and fry for a couple of minutes.
Crush the garlic with a garlic press and add to the pot along with the grated ginger. Fry for some more minutes. Stir in the tomato pulp, vegetable stock, kidney beans and all spices. Season with salt and Cayenne pepper.
Let it come to a boil and let simmer on medium-low heat for 10-15 minutes. Serve and enjoy!
