Lemon bites

Ingredients

  • 1 cup coconut flour
  • 1 cup oats, gluten-free or regular
  • 1/2 cup cashew nuts
  • Juice and peel of 1 organic lemon
  • 1/2 cup apple sauce
  • 3 tbsp rice malt syrup
  • 2 tbsp maple syrup
  • 1/2 tsp ground vanilla

Instructions

  1. Process oats and cashew nuts in a food processor until finely ground. Add all other ingredients and pulse until all is well incorporated. Roll into balls and place in the freezer for about 1 hour. Store in an airtight container in the fridge.
