Ginger hummus with sun-dried tomatoes

Servings 3 -4

Ingredients

  • 1 glas/can chickpeas, about 350 grams
  • 1 garlic clove
  • 6-7 sun-dried tomatoes in olive oil
  • 2 cm -long piece of ginger
  • 3 tbsp olive oil
  • Juice of 1 lemon
  • 120 ml water
  • Salt and black pepper

Instructions

  1. Drain chickpeas and place in a food processor along will all other ingredients. Mix until creamy. If you prefer it thicker or more runny, adjust the water according to your liking.
