Yellow lentil soup

Uuuhhh, Regen, Regen, Regen. Hier ist es nass, kalt und ungemütlich und wir sind alle schon wieder erkältet. Frühling wo bist Du nur?? Aber was gibt es Besseres bei einer Erkältung und nasskaltem Wetter, als eine heiße Schale voller köstlicher Suppe?! Mit frischem Ingwer zum richtig durchwärmen. Diese Suppe ist superschnell und einfach gemacht und tut einfach nur gut!

Yellow lentils add lots of protein and fibre and coconut milk makes this soup incredibly creamy and delicious.

Yellow lentil soup

Servings: 4 -6

Ingredients

  • 1 1/4 cups yellow lentils
  • 1 medium-sized sweet potato, cubed
  • 1 large carrot, sliced
  • 1 large onion, chopped
  • 1 tsp black mustard seeds
  • 1 garlic clove, minced
  • 1 tbsp coconut oil
  • 2 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp turmeric
  • 1 tsp curry powder
  • Salt and black pepper
  • 400 ml coconut milk
  • 2 cm -long piece of ginger, grated
  • 1 l hot water
  • 1 lime

Instructions

  1. Heat coconut oil in a pot and add mustard seeds. When they start to splutter add onions and garlic. Fry for a couple of minutes. Add sweet potatoes, carrots and lentils and fry for a couple of minutes more. Add the hot water and let it come to a boil. Cover and let it simmer for 10 minutes. Add spices, ginger and coconut milk and let it come to a boil again. Blend either with a hand blender or use a regular blender. Serve!
  2. Tastes great drizzled with a little lime juice.
