Ginger hummus with sun-dried tomatoes

I simply love hummus but that wasn’t always the case. Until some time ago I used to sometimes buy readymade hummus from the grocery store and I just didn’t like it at all. At one point I just thought to try making it myself and since then we eat it all the time. First of all it’s so was and quick to make and secondly there are so many variations. Best of all is of course that hummus is super healthy with lots of proteins and fibre. It’s even supposed to help lower cholesterol.

Hummus tastes great with some veggie sticks or served with some grilled vegetables. It’s also makes a perfect bread spread.

Originally hummus comes from the Middle East and is made with tahini ( a paste made from sesame seeds). I omitted the tahini in this recipe but added fresh ginger and sun-dried tomatoes which add a nice sweetness.

Ginger hummus with sun-dried tomatoes

Servings: 3 -4

Ingredients

  • 1 glas/can chickpeas, about 350 grams
  • 1 garlic clove
  • 6-7 sun-dried tomatoes in olive oil
  • 2 cm -long piece of ginger
  • 3 tbsp olive oil
  • Juice of 1 lemon
  • 120 ml water
  • Salt and black pepper

Instructions

  1. Drain chickpeas and place in a food processor along will all other ingredients. Mix until creamy. If you prefer it thicker or more runny, adjust the water according to your liking.
